Our oil is made by cold pressing the olives growing our farm, within 48 hours after the harvest. We grow the following olive varieties with the IPM method: Leccino, Moraiolo, Frantoiano, Pendolino, Arbequina.

The immediate cold pressing (27°C/80,6°F) produces the finest EVO oil preserving elements and healty properties. The predominant fatty acid in olive oil is a monounsaturated fat called oleic acid, making up 73% of the total oil content.
Studies suggestthat oleic acid reduces inflammation andmay even have beneficial effects on genes linked to cancer.
