In 1991 a gradual renewal of our vineyards began.
Beside the traditional grape varieties of the region such as Sangiovese, Canaiolo, Trebbiano and Malvasia, international grape varieties are now grown: Chardonnay, Pinot blanc, Merlot and Cabernet Sauvignon as well as an old native vine, Grechetto.
In the same year 1991 an important research plan began: Santa Vittoria started cooperating with the Istituto Sperimentale per la Viticoltura, seat of Arezzo. An experimental vineyard was planted with 15 white and 15 red different grape varieties, with vinification of the most interesting among them. Following this experimentation new DOC Valdichiana was approved in 1999 and new vine varieties were authorized by the Regione Toscana.
Our estate choosed to plant Incrocio Manzoni 6.0.13, Nero d’Avola, Pugnitello and Foglia tonda due to the excellent results obtained in the field and in microvinifications.
In 2003 a project for improving sweet wine has been promoted by Arezzo province with the qualified assistance of enologists dr Tachis, dr Marone and dr Staderini. Late harvest are being experimented vinifying both vines cultivated in the farm and vines expecially planted for the experimentation like Gewürztraminer and Sémillon.
